Here are the types of hot routes that aren't zones, and what they do

Spy - the spy pays attention to where the QB is, and prevents him from going more than 2 or 3 yards across the LOS, unless he breaks the tackle. He follows the QB as long as he's behind the LOS

contain - a contain prevents the QB from rolling out to a certain side, because the guy containing doesn't blitz in unless the QB scrambles to that side, or the line shifts to the opposite side

pinch the Dline - This is when you hit L1/LB and the left stick down and the dline should move closer in

crash the dline - this is when you hit L1/LB and the right stick down and your line should all blitz to the middle
